Cocktail à la Louisiane

As many of you know, I like to collect cocktail recipes made with the notorious spirit known as the “green fairy” or absinthe.  Over the years, I have managed to collect over two dozen of  the classics, and I want to share one from my region of the world with you for the holidays.

For several years absinthe had a bad reputation, it was considered addictive and even poisonous. During the decades that it was banned, people turned to other spirits or simply omitted absinthe. Nearly forgotten, absinthe  is making its return. In many of the old recipes, there was only a few dashes of absinthe (a little absinthe goes a long way).

Here is a classic recipe for Cocktail à la Louisiane with absinthe: (garnish with brandied cherries)

  • 2 OUNCES
  • ¾ OUNCE
  • ¾ OUNCE
  • 3 DASHES
  • 3 DASHES

Pour all of the ingredients into a mixing glass and add ice. Stir well until the cocktail is chilled and strain the contents into glass. Add one large ice cube and garnish with three brandied cherries on a cocktail pick.

It’s a taste of Louisiana —and hell— even the brandied cherries look a little like Christmas!

1 teaspoon absinthe
2 tablespoons (1 ounce) Benedictine liqueur
1/4 cup (2 ounces) dry vermouth
1 cup ice cubes
1 thin strip orange peel


Pour the absinthe, Benedictine liqueur, and vermouth into a cocktail shaker and stir. Stir in the ice and chill for a minute before straining into a glass. Add the orange peel before serving.
